Smashed Avocado on Toast with Poached Egg
A quick ten minute breakfast, you can whip up and enjoy. Plus it’s a great for fueling a busy morning or after working out.
Portion: One Person
– 1/2 Slices of Seeded Wholemeal Bread (Can change to any other bread)
– 1/2 Large Free Range Eggs
Smashed Avocado Ingredients:
– 1 Avocado
– 100G Feta Cheese
– Pinch of Chilli Flakes – To Taste
– Cracked Black Pepper – To Taste
Smashed Avocado Method:
Start by chopping the into two halves avocado, then peel the skin and remove the pit (use a spoon to remove avocado pit, never a knife!). Add the chopped avocado and feta cheese to a large bowl, then smash together with a fork. Once you the feta and avocado is slightly smashed, add in chilli flakes and black pepper. Then, mix this in by smashing these ingredients together until there are small lumps of avocado. Toast your bread and generously spread
Poached Eggs Method:
Crack your egg into a bowl or onto a saucer, this makes it easier to slide into the pan. If there is any very runny white surrounding the thicker white then tip this away. Add a drop of vinegar (you can add this to the water in the pan if you prefer).Then, bring a pan of water filled at least 5cm deep to a simmer. (Don’t add any salt as this can break up the egg white) Start stirring the water to create a gentle whirlpool to help the egg white wrap around the yolk. Slowly tip the egg into the centre. Make sure the heat is low (there only should be small bubbles rising) Cook for 3-4 minutes or until the white is set. Then you can lift the egg out with a slotted spoon and drain it on kitchen paper.
