As many women on this time, I am starting to get ready for summer. I am so into healthy eating and doing some exercise to fit in my favourite dress for last summer and look amazing in a swimming costume. If you are in the same situation than me, you may understand my weakness… Yes, that’s right, sweets, chocolates or cakes. Definitely, aliments that you have to avoid the most when you are on a diet. However, I have found a trick… Low fat desserts! Here you’ve got some recipes.

Light Sponge Cake:

Ingredients:

  • 4 eggs, separated into whites and yolks
  • 125 g powdered sweetener
  • 50 g corn starch
  • 75 g wheat flour

Whip the eggs whites on high speed. When they are nearly done, we incorporate the sweetener and keep whipping the mixture until they become white and frothy. Then mixture is ready when it clings to the beater attachment, but doesn’t drip. Combine it with the eggs yolks. Add the flour and the starch to the mixture. Start by combining the flour and the corn starch in the sieve. Stir up all together.
Transfer the batter into the lined springform pan. Put the cake into the oven and allow it to bake at 180 °C for 25 minutes. Test the cake to see if it is ready. Insert a wooden skewer into the centre of the cake. If the skewer comes out free of any batter, the cake is ready.

Set it aside to cool before removing it from the pan. Remove the cake from the springform pan. Enjoy it!

Apple and Honey Muffins:

Ingredients:

  • 2 eggs whites.
  • 250 g integral flour (wheat, rye or corn)
  • 3 tsp. baking powder
  • ½ tsp. salt
  • ¾ Skimmed milk
  • 4 tsp. olive oil
  • 4 tsp. of honey
  • 1 big apple, chopped.

Preheat oven to 190 °C. Grease muffin tins and set them aside. Slightly beat the eggs whites.

Mix dry ingredients (flour, salt and baking powder) in a large bowl and set aside.

Use other bowl to mix remaining ingredients thoroughly (milk, olive oil, honey and the apple). Slowly add the whipped egg yolks into the mix and fold them in with a rubber spatula.

Pour the liquid ingredients into the dry ingredients. Mix until everything is well moistened.

Scoop into muffin tins and bake for 15 – 20 minutes. Serve cool and “bon appétit”.
